I wish I had a fun anecdote or something clever to say about these cupcakes. But I don’t.
But really? Do these cupcakes need an amusing quip? I mean, they are CHOCOLATE PEANUT BUTTER BANANA cupcakes.
But these are seriously, ridiculously easy. Start with your favorite peanut butter cake recipe. Don’t have one? You can find mine here.
Slice some bananas and lay a few slices on top of your aforementioned baked peanut butter cupcakes.
Now take your favorite chocolate frosting and stick it in a piping bag. My recipe is below. Cut a little bit off the end and cover the bananas with some chocolate deliciousness.
Put down the piping bag. Pick up the cupcake. Eat.
Chocolate Icing
- 1/2 cup unsalted butter, softened
- 1/2 cup shortening
- 12 oz powdered sugar
- 4 oz cocoa powder
- 1/4 cup of water
Beat the butter and shortening together until smooth. Sift the powdered sugar and cocoa together. Add the sugar and cocoa to the butter and shortening. Continue beating until smooth, adding the water as necessary. Additional water may be needed to get the desired consistency.
