Blueberry what? Blueberry who? Blueberry how?

I feel like there have been a lot of blueberries in my life lately. I’m not entirely sure where they have been going, but my blueberry consumption is definitely up this year. I’ve made a few batches of blueberry ice cream, but none of them have really been blog worthy (I’m working on it). Blueberries have been topping french toast and pancakes all summer, and have been generally on hand because they are someone’s favorite fruit.

My most recent blueberry baking extravaganza is this blueberry cobbler. I whipped this puppy up late on a Monday night (I believe Betsy walked in on me baking some cobbler around 10:30 PM, which we enjoyed piping hot at around 11:30.) after being inspired by my favorite simmiecakes commenter.

Meri is Melissa‘s younger sister. I met her when she was 11 or 12 and she wore a Charleston Swimming sweatshirt and her hair in two braids everyday. Hi Meri! Do you mind if I share embarrassing stories about your past? (She also kicked my butt at chess. This wasn’t only the first time I was beaten by a youngin’ in chess. I was much more publicly beaten here.) Since then, I’ve learned that Meri. Is. Awesome. Meri hosted a YouTube cooking show called Barefoot Editors (hey Meri, want to guest blog sometime?) When she was 14 she could talk current events and politics around me, and now little Meri is off to college. (Technically I guess she’s already there…so terrifying, I feel old.)

Now blueberries don’t particularly remind me of Meri. She is neither blue, nor a berry (although I think sometimes people call her Meri-berry. Of course I could just be making that up and have now inflicted a new nickname on her. Hi Meri! Still want to be my friend?) The reason that this blueberry cobbler was inspired by Meri is that some time ago I saw a picture of her with some blueberry cobbler she made. And it looked delicious. It’s as simple as that! Take a picture of yourself with some delightful baked good, and you too can appear on this blog! Perhaps even with embarrassing stories!

So Meri, this blueberry cobbler is for you. (Except that we ate it all and it’s gone. I’ll bake you something else sometime, just let me know.)

Blueberry Cobbler

adapted from Better Homes and Gardens New Cookbook

  • 1 cup all purpose flour
  • 2 Tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter
  • 5 cups blueberries
  • 1/3 cup of sugar
  • 1/4 cup water
  • 1 Tbsp corn starch
  • 1 egg
  • 1/4 cup milk

In a bowl measure the flour, 2 Tbsp of sugar, baking powder, and salt. Cut in the butter until you have a coarse mixture.

In a medium pan, measure the blueberries, 1/3 cup of sugar, water, and corn starch. Set on medium heat until the blueberries start to simmer. Heat until the sugar has dissolved and the blueberries thicken. It should only take 5 or 6 minutes. Remove the berries from the heat.

Pour the hot blueberries into a medium casserole dish (about an 8×8 size would work well). Mine was a little bigger than that.

In a small bowl, beat the egg and milk together. Then add the wet mixture to your dry flour mixture. Stir until moistened. Spoon the batter on top of the blueberries evenly.

Bake at 400ΒΊ for 20 to 25 minutes until the batter is a golden brown.

Allow to cool for at least 30 minutes and enjoy!
