Wednesday nights are nice nights around here. I don’t have meetings, practice, rehearsals or generally any other commitments. Lately Andrew has been going to hockey on Wednesday nights so I usually have the evening to run errands, lounge around, and most often, bake.
I’ve been thinking about this pound cake for a while. Recently I’ve been reading all about this whole infusing sugar with zest thing by, well, rubbing the zest into the sugar before adding it to the batter. Also, I’m back on a pound cake kick. (Is that really a kind of kick someone should be on? This seems like a dangerous road I’m wandering down.) Anyways, apparently if you rub zest into sugar, it makes the sugar quite fragrant. (I can attest to that, my kitchen smelled so zesty and orange and fresh.)
I was going to type up the recipe and all but it’s nearing an obscenely late hour and I have to get up obscenely early for a marginally enjoyable (not enjoyable) spinning class. So, you’ll have to wait for tomorrow for that. But just know, this cake smells ridiculously awesome. Be ready.
