I’ve gotten settled enough into my condo, that I’m finally ready to tackle the kitchen. I’ve been woefully bad at cooking since I’ve been here, usually subsisting on cereal, turkey sandwiches, or bread and cheese when I don’t go out to eat for dinner.
But today I made a late night stop at the grocery store to pick up some ingredients for dinner tomorrow night. I’m going to have a few people over and we’re going to grill on the deck. It’s been a while since I’ve cooked, for myself or otherwise, and as I was walking the aisles, each time I turned a corner I thought of something else to make.
I’ve had a pint of strawberries in my fridge for a while and they were in desperate need of eating or baking. So I decided strawberries were going to be part of tomorrow’s dessert. I went through a number of ideas, including this pound cake, this cake, before settling on strawberry shortcake.
Sadly, I’m missing a few ingredients (darn the completely empty kitchen!), so the biscuit will have to be baked tomorrow, but I was able to get the strawberries ready. By tomorrow evening they should be nice a juicy and sweet. I’m excited to start cooking and baking again!
