Blueberry Scone

Today was one of those days that just got away from me. Not that that’s a bad thing, but before I knew it, it was 8:30 PM.

That’s one thing I’ve realized about being here. Weekends are more often than not, weekends of relaxation. Because I’m not at home, I don’t have all the commitments that usually come up on the weekends. No practice, no services, no rehearsals, so weekends are often best used for some quiet time.

We start work an hour earlier down here than I usually do up in MD, so by the end of the week, I’m usually exhausted. As is the case, if we get a Saturday off, I usually spend half the day lounging around. I still wake up early, but I take my time getting breakfast, getting showered, and generally getting moving.

Surfing

I rented a surfboard for the weekend in hopes to take advantage of this nice weather we’re finally having. This board is really really short, which means most of my time is spent trying to get on the board, rather than actually surfing. It’s hard, and I’ll probably trade it in for an easier one tomorrow, but I’m still having a ton of fun. Plus, you can’t beat that view.

However, given my recent scone binge, I decided it was not financially prudent to buy the Publix scones everyday. Also, sometimes they were out and it made me sad. So I figured I would whip up a batch of blueberry scones and it ended up being a great idea. These scones are not as dense as the Publix ones, but they’re also not too sweet and have a nice crumble to them. Recipe tomorrow. (If I can squeeze it in between all of my lounging. Seriously, there’s a good chance I might forget. Or fall asleep.)
