I often buy lunch at work, mostly for the convenience, but definitely not for the food. In the eight years I have worked here, the menu has rarely varied from the same rotation of options and to be quite frank, it gets pretty boring.
I don’t actually mind bringing my lunch when it doesn’t require me to do any preparation in the morning. I’m barely functional as I stumble out the door in the mornings. I’m capable of grabbing on a container of leftovers, but that’s about the extent of it. I know, I know, I could make my lunch the night before. But for a salad or sandwich, I really prefer them to be freshly made.
Hence my new method. I go to the store at the beginning of the week during lunch. I buy all the required ingredients for a week’s worth of sandwiches. Then, each day I assemble my lunch right before I eat it. It’s great. No soggy bread. No chilly bread. No stale bread. Apparently I’m very picky about my bread. This week’s sandwich is chipotle chicken on multigrain bread with lettuce, tomato, and cheddar cheese. I have an avocado to add to it at the end of the week.
