When we moved into our house Andrew got a smoker as a housewarming/holiday gift. Nine months later, he finally broke it out.
Let me just tell you, smoking something is a commitment. Around 11 this morning he set the thing up. There’s charcoal and water and wood chips involved. This smoker is a beast. It’s probably two and a half feet tall and when it’s cookin’, the smoke is billowing out of this thing. It’s fragrant smoke though because of the food chips, but I can only imagine what it must have looked like from the street.
Andrew decided to smoke sausage and make a brisket for Sunday Night Dinner tonight. So, a good six hours before dinnertime he put the meet in the smoker and left it there to cook nice and slowly all afternoon.
When he pulled the meat off, it was charred on the outside and full of flavor. For a first smoking experience, I think he did a pretty good job. Jen and Evan came over tonight and we had a full BBQ meal with salad, corn, and cornbread (no such thing as too much corn). I think the only thing we were missing was baked beans.
Smoking something is not something you are going to do on a whim. It’s a good method if you have a party and need food for a lot of people because you can cook a lot at the same time without needing constant attention. I think Andrew definitely enjoyed it, so I can see us doing this again before too long.
P.S. Chair update: I’m still pulling out staples. I think I’m going on hour five of staple removing.
