After weeks of travel and weekends spent at amusement parks and in suburban Pennsylvania, I finally had a chance to cook. I’ve recently had a hankering for Asian food and since Jen and Evan were coming over for dinner, I thought this would be a good chance to dig up an old recipe for Asian turkey lettuce wraps. It turns out it was so old that I couldn’t actually find it, so I sort of made up my own.
It was exactly what I was hoping for. Turkey itself is a bit lighter and serving it in lettuce helps keep it that way. The pickled carrots gave it a nice refreshing bite and the meal was filling without leaving us feeling too full.
Today was a nice day to catch up on sleep, relax, and enjoy the nice weather. The sun was out, but the cooler weather has been sticking around. We spent some time in the yard and I did some reading outside.
Since today was a leisurely day, I had some time to actually make a real dessert this week. To stick with the fresh theme, I decided to make a fruit pizza. With a sugar cookie crust, a cream cheese and marshmallow sauce, and topped with fresh fruit, it capped off our meal perfectly.
