Andrew and I made our way down to VA to have dinner over at Jen and Evan’s tonight. I’ve been commuting back and forth to Virginia many more times than I wanted over the past week or so because of work and car troubles and other things that make me groan. However, dinner was a much better excuse to make the drive around the beltway.
The last few days have been atrociously hot so Jen was smart to make dinner in the crock pot. Going over for dinner is great because what we’re having is usually a surprise and it never disappoints. Whenever we walk in the door I look to see what she has on the counter to try to guess what’s cooking. I’m basically never right, but it’s a fun game to play. I did successful surmise she was making something in the crock pot this week though!
Jen said this was a new recipe for them, and I thought it was great. The chicken tikka masala was bubbling in the pot when we got there. She substituted parsley for cilantro on the cucumber salad (thanks!) and the chicken was tender and flavorful. A garden salad and some warm naan rounded out the meal. I’ve never made Indian food from scratch (in fact it’s only been recent months that I’ve really acquired a taste for Indian food), but I’m inspired to try.
