I’ve noticed a few things about the cuisine around here. First, it’s not that good. Second, it’s not very diverse. There are probably 15 restaurants here that are some local variation on Red Lobster or an Applebees. While I do enjoy a sizzling grill chicken, shrimp explosion ultimate feast every now and then, I can’t eat them every week. Third, they really like BBQ. I haven’t consumed this much BBQ sauce since…I’ve never consumed this much BBQ sauce. It makes me feel ill. I think I need to limit my BBQ intake to one a month.
So, when I’m not eating at one of these generic grill type restaurant digs, I’m trying to eat some vegetables. I’ve been consuming enormous amounts of kale, giant bowls of tomatoes, and tonight I indulged in some edamame. Edamame is quick, easy, and delicious. (Especially when you buy a frozen bag and all you have to do is boil it.)
This bowl of edamame is dedicated to my friend Jen. Jen is one of four Jens in my life. Jen is also the busiest person I have ever met. She works a bajillion hours a week and quite frankly makes me feel like a slacker (as I type this while overlooking the beach after spending the day doing yoga, surfing, and sitting on the couch…hmm…). Jen is very important in my life though. It’s because of Jen that I met Andrew. There is so much more to this story, but that is for another day.
Jen is also the fastest consumer of edamame I have ever met in my life. We went to a party once and I swear within fifteen minutes she had eaten like three bowls of edamame. I don’t think I even realized there was edamame at this party before it was gone. Jen can also drink hot beverages remarkably fast. Whereas it takes Andrew an hour and fifteen minutes to drink a cup of coffee (one hour to let it cool, fifteen minutes to actually drink it), it takes Jen, oh, three. She will have finished her beverage before you’ve even picked your up at the Starbucks counter. It’s a gift. As I am The-World’s-Slowest-Eater, Jen will sit on her hands before starting the second half of her sandwich before I’ve taken my second bite. She’s very considerate in that way.
So Jen, it probably took me five and half times as long as it would have taken you to eat this bowl of edamame, but it was really good. See you soon!
