Andrew is on a mission to perfect his tandoori chicken. I don’t think he ever made tandoori chicken before today, but he’s decided it’s his goal for the year to perfect his recipe. I’m not even sure when he got this meal together. When I went to bed last night we had nothing. When I woke up this morning, the chicken was marinating in the fridge, there were bags of vegetables on the counter, and a canister of wild rice waiting to be made. Andrew was like a magical cooking elf last night.
His first try at tandoori chicken was awesome. The chicken was moist and flavorful and the char from the grill made it extra delicious. We served it with a side of wild rice and a boatload of Moroccan style roasted vegetables. I should have photographed the marinade for the vegetables, because not only was it delicious, but it was beautiful and colorful. The vegetables were spicy, but complimentary to the chicken. It was a great meal.
Jen, Evan, and Rob came over for dinner tonight and it was a delightful evening. We got to witness hangry Jen which was both entertaining and a little terrifying. There’s no Sunday dinner next week because Jen and I are going to be away, but this little tradition we have is both excellent because not only do we get hang out with our friends for an evening, but we’re starting to rack up a nice selection of different meals. Can’t wait for the next one!
