Sometimes it’s 10 PM and you get an itch to bake. Tonight it was chocolate chip cookie batter that’s in the fridge for tomorrow and some late night lemon bars that are as tart and buttery as you remember.
I used an old recipe I made a couple of years ago. I was pretty sure lemon bars involved a lot of stirring over a stovetop, but in reality, this recipe is super simple. It has a three ingredient crust and a four ingredient filling that requires no cooking and a small amount of whisking. Perfect for when you start making them two hours before midnight.
