For dinner tonight we made an old staple. Andrew first made this a couple of years ago and it’s super delicious. It looks super rich and creamy and it is, but it’s not from cheese or cream or anything! It’s butternut squash! He makes it with Italian sausage and some baby spinach and it’s sooo good. I blogged about it before and you can find the recipe here.
We’ve made it with a variety of different kinds of pasta before (that last post was Valentine’s Day themed pasta I think), but this time we made it with linguine. Homemade linguine at that. Honestly, we just didn’t have any pasta, but we had flour, eggs, and water, a pasta maker, and some time, so sure, why not? Homemade pasta isn’t super hard to make (if you have a pasta maker) and it’s totally worth the time.
Jen and Evan came over for dinner and tolerated me bouncing between watching the Patriots game and the WFTDA Championship game. The derby bout was insane. Andrew and I were literally on the edges of our seats through the final jam as Gotham took it by three points over Rose City. So exciting!
