We kicked off the week with some Passover fun! There is so much I love about this photo. Thanks for taking it Ella!
We had this crazy beet tartare salad that sort of looked like a giant raw hamburger on the plate. It tasted good though, I promise! I think the best part was the roasted pecans. Andrew did good!

And this is what you have for breakfast the next morning. Mimosas are totally kosher for Passover!
We had an extra chicken sitting around so we roasted it along with a mountain of vegetables.
Lots of Passover baked goods call for a lot of egg whites. So what do you do with the yolks? Make lemon curd!
Fun fact: chia seeds are kosher for Passover. I made some strawberry chia jam. Too bad we couldn’t put it on biscuits.
I went to Denver for the day for a work meeting. It seems silly to fly 2/3 of the way across the country for a four hour meeting. Oh well. I got to see my cousin though and that was awesome!
