When we walked into Jen and Evan’s house this week there was a flurry of activity happening in the kitchen. Jen was simultaneously prepping our dinner and preparing a number of dishes for the upcoming week. She had tomatoes stewing on the stove, broccoli and endive being prepped on the table, asparagus roasting, and a host of other things going on. With four extra hands available we soon got everything under control and proceeded to occupy ourselves with eating bread and cheese while waiting for dinner to finish up.
Dinner was a classic tomato soup and grilled cheese affair. I had a cheddar and green apple grilled cheese, but everyone else had a four cheese sandwich that oozed when you cut it. The tomato soup was hearty and flavorful. I was never much of a tomato soup person growing up, but I have to say, I prefer my tomato soup with some texture over the perfectly smooth stuff that comes in the can. For a dinner that on the surface seemed rather light and simple, I was stuffed when we were done.
